Marinade:

2/3 cup Olive Oil

1/2 Cup White Vinegar

1/2 Cup Lemon Juice

4 cloves minced garlic

2 TBS parsley

2 TBS basil

1 TSP oregano

1 TSP garlic salt

1 TSP salt

1 TSP black pepper

Preparation:

Combine above ingredients

Cube 2-3 lbs. of backstrap (1 inch cubes) and place in marinade overnight

Place meat on skewers and grill over high heat

Serve rare to medium rare. True spiedies are served straight up in piece of Italian bread or roll. Also great served Greek-style in a pita, with onions, tomato, and tzatziki.
